Blueberry Syrup

Growing up, my mom often made this delicious blueberry syrup along with homemade pancakes. I've adapted what was once a weekend tradition in my childhood into a smooth syrup for matcha (or coffee).

Also, I love saving the strained berries for yogurt (or just for eating later).

Ingredients
  • 2 cups blueberries
  • 1 cup water
  • 4-5 tbsp sugar
  • 1-2 tsp lemon juice
 

Directions

  • Add everything to a saucepan.
  • Simmer 7–8 min until berries burst.
  • Mash berries, then strain through a sieve.
  • Taste and sweeten more if needed.
  • Cool and store in fridge up to 1 week.
