Blueberry Syrup
Growing up, my mom often made this delicious blueberry syrup along with homemade pancakes. I've adapted what was once a weekend tradition in my childhood into a smooth syrup for matcha (or coffee).
Also, I love saving the strained berries for yogurt (or just for eating later).

Ingredients
- 2 cups blueberries
- 1 cup water
- 4-5 tbsp sugar
- 1-2 tsp lemon juice
Directions
- Add everything to a saucepan.
- Simmer 7–8 min until berries burst.
- Mash berries, then strain through a sieve.
- Taste and sweeten more if needed.
- Cool and store in fridge up to 1 week.
